A Salad a Day




I know it's meant to be an apple a day, but a salad a day really packs a punch. And I'm not talking about a lettuce leaf and a few carrot sticks either.

Salads don't have to be boring. There is every kind of leaf under the sun that you can think of. Different colors, different textures. What about all the other bright and beautiful vegetables like tomatoes, cucumbers, capsicums, purple onion.Throw in a few nuts or seeds....and wow!

If you're eating a salad as a main meal, just make sure it's balanced with some sort of protein and a little fat. Yes, I said the " F " word. A little good fat like olive, avocado or sunflower oil will not wreck your healthy diet.

Make a delicious dressing with some lovely sweet and tangy balsamic vinegar, garlic, limes and lemons, chilli. ( Not all together ) go with the flavours that you love.

I love thai style dressings with lime, chilli, coriander, a little palm or brown sugar and a splash of peanut oil. Add prawns and mango. This would have to be one of my favorite salads.
